World lightweight champion Taylor will defend her belts against WBO mandatory challenger Gutierrez (13-0), the 37-year-old Spaniard who beat Keren Batiz last year to win the interim WBA belt, on Fight Night in London.
The Bray Boxer's bout is one of three world title fights on the card, with Terri Harper set to defend her WBC super-featherweight belt against Katharina Thanderz, and Jorgelina Guanini's WBA bantamweight title fight against Rachel Ball.
Taylor (16-0), 34, defeated Belgian Delfine Persoon on points for the second time in her last fight.
The 2012 Olympic gold medalist is delighted that there will be three women's world title fights on the card.
"When I was growing up there weren't female boxers on these professional cards," she told BBC Sport.
"The fact there are three world title fights on one bill this weekend, I never thought I would see that growing up. That in itself is a great legacy.
"I want girls to do even better than what I have done in my career. That is what true legacy looks like."
